Soto Ayam

This is what I made over the weekend. It's called "Soto Ayam" which is a Malaysian dish. Although John doesn't know what it is so I think it might be a regional dish.

Although it looks like clear soup, this is definitely not a bland dish. It is put on the stove for over two hours so that the flavour from the chicken goes into the soup. There is also an aromatic fragrance of coconut milk coupled with 4 popular spices used in Malaysian cooking. I did not have fried shallots or I would have put some in along with thinly sliced strips of cucumber, to make it even tastier!

Hm.. There's something really satisfying about eating something that you spent 2 hours making =) This really reminds me of home!
